This calves liver, rich with iron & nutrients, is extremely tender & rich in flavor. This liver is hand-cut by our master butchers.
Serving Size: Approximately 6-8 oz. per Person
Ingredients: Soaked & Salted Milk-Fed Premium Veal.
Note: In accordance with Kashruth laws, all livers must be broiled prior to being consumed. It is very important when doing so that separately marked utensils be used and cleaned apart from other meat equipment. The liver must be thoroughly washed & salted on both sides with coarse kosher salt. It should then be arranged on a broiler or other cooking grate, with a catch basin below for the blood. Please note that the blood can never come into contact with the liver. The liver must be thoroughly cooked on both sides (once the top side turns dark brown, flip with the designated kosher utensil and salt the other side). Once both sides are cooked, remove from the oven using the same utensil and rinse in cold water. Please note that all veal should be cooked to an internal temperature of 145° as listed on foodsafety.gov, with a 3 minute rest time. Once the liver is koshered, it may be used in any recipe without reservation.
