Preheat oven to 400°. While the oven preheats, remove the chicken from the refrigerator and allow it to come to room temperature. This ensures that it cooks more evenly. Do NOT cover as this will trap steam and result in soggy chicken. Place chicken on baking pan in a single layer and bake until the skin feels hot and very crispy, about 15 minutes. The chicken’s internal temperature should register at least 165° on a meat thermometer.
