      Capons are extremely rich & flavorful with juicy meat that does not taste gamey. They are full-breasted with a high fat content, resulting in a rich & moist dinner meal. These Capons are hand-selected by our master butchers on as as-ordered basis.

      Serving Size: Approximately 1 lb. per Person

      Ingredients: Soaked & Salted Free-Roaming & Antibiotic-Free Chicken.

      Recommended Cooking Instructions: Defrost overnight in refrigerator. Follow desired seasoning recipe. Preheat oven to 375°. Bake capon uncovered on a roasting rack for approximately 1 ¾-2 ¼ hours. If stuffed the baking time increases to approximately 2-2 ½ hours. Bake uncovered until the skin is a light golden color and then cover loosely with a foil tent. During the last 45 minutes of baking, remove the foil tent to brown the skin. Basting is not necessary but will promote even browning and a very tender bird if done every 20 minutes or so. The only true test for doneness is the temperature of the meat, not the color of the skin. The capon is done when the thigh meat reaches an internal temperature of 165°. To get an accurate reading, be sure that your thermometer is not touching the bone. If your capon has been stuffed, it is important to check the temperature of the dressing; it should be 165°.
