A more tender & fattier cut of brisket than the first-cut, a second-cut brisket, while smaller, can be utilized in much the same types of preparations. Just be careful to make sure that multiple pieces, in the event you are using such, are similarly sized so that they cook evenly. There are greater size limitations with a second-cut brisket, as 3+ pounds is about as large as they come. These Grass-Fed Beef Briskets cook patiently “slow & low” and result in amazingly delectable barbecue or traditional-style fare. These briskets are hand-cut to your size preference by our master butchers on an as-ordered basis.
Serving Size: Approximately 8-10 oz. per Person
Ingredients: Soaked & Salted Grass-Fed & Antibiotic-Free Black Angus Beef.
Recommended Cooking Instructions: Preheat oven to 325°. Place second-cut brisket in a large casserole or Dutch oven with a tight-fitting lid. Follow desired seasoning & basting recipe. Cook 2-2 ½ hours or approximately 40-60 minutes per pound. Please note that all beef should be cooked to an internal temperature of 160° as listed on foodsafety.gov.
